Hey Tom I'm cracking up because my husband and I have a battle about "expiration dates". I check everything before buying it at the store...if you see a lady destroying the milk and bread section looking for the longest shelf life ...it will be me! lol....Getting back to your question...the oil that you use in cooking has a shelf life and when it's heated it changes it's structure....so the "chips" are going to get rancid...a taste that is strong to some taste buds....mine are super sensitive..my husbands are not..he is like you and says "nothing wrong with these chips" or "crackers"....so I just let him munch away while I'm opening a new bag of snacks...I get heartburn....so I try and eat these chips etc that are as fresh as possible. Buy the time they get from the bakery or factory to the stores we don't know how old they are....in closing "the fresher the better" is my motto as I crunch on my Cape Cod potato chips with less fat!....

Bad no, lose their freshness and go stale, oh yes. I used to work in factory where they made potato chips, the expiration date on the package means nothing if they are not kept in cool storage. Either in the store or your home. If your chips got wet or something like that would be the only explanation on them going bad.... Happy eating there are a multitude of different chip flavors out there.

Your fine to eat them as long as the smell and taste alright. Potato chips can go rancid. If they smell rancid, you should not eat them as you could get sick at that point. Due to preservatives, potato chips can often last past their dates. The dates are more for a sell by date than an eat by date.

Chips will go stale but when in doubt you can make a great breading for chicken, fish, pork chops. Bar-B-Q chips especially for chicken. A little crushed chips, a little flour... YUM!!

Over time I think it is possible for the fats to break down (but they slow this down by adding nitrogen to the bag and removing oxygen). Even so, this wouldn't make you ill. If it tasted good, it's probably good.

Yes they can go bad.
No, yours don't sound like they've gotten there yet.
Bad chips:
Stage one~ stale
stage two~ the oils become rancid
Note: they are so full of chemicals it takes a long time to get there.

They are fried and oil turns rancid. But they are packaged without any air in the bag (it is some other gas).
