Induction cooking is okay, I would prefer gas but in todays world that is becoming harder to find if you rent. I would say that Induction is second best and keep in mind that you would also have to invest in cookware that has the correct magnetic properties.

From what Ive been told about induction cooktops, is that they have been in use in entire professional kitchens in Europe since the 80s. Ive seen cooking being done with an induction cooktop. The pans dont have to be anything special other than steal or iron, some material that is magnetic. So if you put a magnet up to your pan and it sticks, it will work and you dont need to go buy new pans. As far as safety, it is the best. You can literally put a papertowel between the surface and the pan and saute, without the papertowel catching on fire. And they heat up just as fast as gas and cook as hot. Personally I cant wait for prices to come down so I can buy one.

Pans for induction stoves are becoming increasingly easier to track down as the induction stove rises in popularity. All Clad, of course, Emeril stainless, Henckels (yes the knife guys) makes an insanely nice set, and all cast iron pieces will work. I found a whole set of enameled cast iron on HSN for $200, and it works great on induction. I also heard that Calphalon is about to introduce a set of enameled cast iron AND magnetic cookware.
So yep, gas rocks. But induction stoves are fantastic in their own right. They heat quickly, and if you leave a potholder on the stovetop, you won't burn the house down! And a whole new world of induction cookware is coming our way.

A load of rubbish in my opinion. We have gone through 5 in the last 18months. Hard to get things heated with them initially, fiddly to use and the saucepans for them are incredibly expensive. We have gone back to gas...
