on my birth certificate my fathers name is listed as "alfred diaz" and his place of birth says "N.F.I." I also have been told that his real name was "Albert" and that he died before I was born. Any help on how I can learn the facts of my father?

It means "No Further Information"
So no details other than your fathers name have been provided at the time your birth was registered.

If your mother won't tell, her parents, brothers, sisters or old friends may remember something about him. They may not tell either. If the town you live in is small, you might find him in a city directory from the year you were born. The library probably has old ones. If you live in Chicago or LA, there will be a lot of them.

An obituary would tell you about him if, again, someone tells you his real name and when he died.

may help. Click on "Advanced" and try. If, for instance, you were born in June 1982, your father was alive in September 1981 and died before June 1982. Look for "Diaz" in your birth county who died in 1981 and then in 1982. (You can't use a range in the death year.)

Write if you find him and need help finding an obit.
