when you take it out of the oven should the juices be clear and the meat pink?

No, it's like turkey or chiken -it's a bird so the meat should never be pink. i find it's best served with some roasted wild mushrooms and apples - it's really amazing!

The juice should run clear, just as a chicken. the classic way to serve pheasant is under glass

I prefer to slice it into thin strips, batter it, and fry it...like chicken strips. They come out very tender and juicy. But if you're going to bake it, then the juices should be clear but the meat should not be pink. It should be white like if you were roasting chicken.

pheasant should be served like duck. it is dark and actually can be somewhat greasy. I would serve it whole with some wild rice

all poultry should be cooked to a minimum of 165 degrees
everything still has an internal cooking time so put a thermometer in it and take it out at about 160
