My husband is type 2 diabetic. Here are some recipes I have found. Hope they will be what you need.
Title: Chewy Oatmeal Raisin Bars
Categories: Diabetic, Cookies
Yield: 32 bars
3/4 c Packed Splenda brown
4 tb Margarine, softened
2 Egg whites
2 ts Vanilla
1 ts Baking soda
1/4 ts Salt (optional)
1 c Raisins
1/2 c Splenda
3/4 c Applebutter or applesauce
2 tb Skim milk
1 1/2 c All-purpose flour
1 ts Cinnamon
3 c Oats (quick or oldfashioned,
-uncooked)
Heat oven to 350~. Beat together Splendas and margarine
until blended. Add apple butter, egg whites, milk,
and vanilla; beat well. Add combined flour, baking
soda, cinnamon, and salt; mix well. Stir in oats and
raisins; mix well. (Dough will be moist.) Spread
dough in greased 13-by-9-inch baking pam. Bake for 25
to 30 minutes or until light brown. Cool before
cutting into bars.
Title: Pumpkin-Oatmeal Bars

Yield: 24 servings
1/3 c Splenda; 1/4 ts Ground nutmeg;
1/2 c Vegetable oil; 1 1/2 ts Ground cinnamon;
1 Egg; 1/4 ts Ground cloves;
1 c Pumpkin; cooked or canned 1/2 c Orange juice;
1 1/2 c Whole wheat flour; 1/2 c Walnuts; chopped
3 ts Baking powder; 1/2 c Raisins;
1/2 ts Baking soda; 1/4 c Coconut;
Cream together the sugar, oil, egg and pumpkin until light and
fluffy. Stir in the dry ingredients and orange juice. Add the nuts
and raisins. Stir to blend.
Pour into a lightly oiled 13 by 9 inch baking pan. Sprinkle on the coconut. Bake in 350 F oven for 25 to 30 minutes. Cool the pan completely on a wire rack for 5 minutes. Cut into bars.
Jo-Ann's Power Bars
"These power bars are delicious and much more nutritious than most granola bars. They are very filling, too. Instead of using dried mixed fruit, feel free to substitute any of your favorite dried fruits. Same goes for the nuts."
INGREDIENTS
1 cup quick-cooking rolled oats
1/2 cup whole wheat flour
1/2 cup wheat and barley nugget cereal (e.g. Grapenuts TM)
1/2 teaspoon ground cinnamon
1 beaten egg
1/4 cup applesauce
1/4 cup honey
3 tablespoons brown sugar
2 tablespoons vegetable oil
1/4 cup unsalted sunflower seeds
1/4 cup chopped walnuts
1 (7 ounce) bag chopped dried mixed fruit
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Line a 9 inch square baking pan with aluminum foil. Spray the foil with cooking spray.
In a large bowl, stir together the oats, flour, cereal, and cinnamon. Add the egg, applesauce, honey, brown sugar, and oil. Mix well. Stir in the sunflower seeds, walnuts, and dried fruit. Spread mixture evenly in the prepared pan.
Bake 30 minutes, or until firm and lightly browned around the edges. Let cool. Use the foil to lift from the pan. Cut into bars or squares, and store in the refrigerator.

1/3 cup honey
2 egg whites
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1-1/2 cups uncooked quick oats

Directions
Preheat oven to 350 degrees F. Place almonds on cookie sheet; toast 8 to 10 minutes or until golden brown. Set aside. Do not turn oven off.
Combine honey, egg whites, cinnamon and salt in a large bowl; mix well. Add oats and toasted almonds; mix well.
Drop by rounded teaspoonfuls onto ungreased nonstick cookie sheet. Bake 12 minutes or until lightly browned. Remove to wire rack to cool.

I, personally, wouldn't take a "box" mix that requires oven cooking and put them in the microwave..but here's a microwave brownie mix that you can try in the future. MICROWAVE BROWNIES 1 c. sugar 2 eggs 1/2 tsp. salt 1 c. chopped nuts (any kind) 1 tsp. vanilla or lemon flavoring 1/2 c. cocoa 1/2 c. butter Crisco or butter 3/4 c. all-purpose flour In mixing bowl beat together the eggs, sugar, flavoring and salt for one minute at medium speed or until very light. Add melted butter Crisco (or butter) beating well. Mix in flour and cocoa at low speed. Stir in nuts, spread evenly in 8 or 9 inch square pan or glass dish, well-greased. Microwave on high 6 to 7 minutes (if not using rotary, rotate dish half turn every 2 minutes). When done, top will look dry and spring back when touched. Cool before cutting. About 20 brownies.
