According to one of my favorite wine books..."Wine for Dummies" most red wines should be served between 62 and 68 degrees and almost all should be decanted for a period before drinking (of course the customer ordering should already know that and let it breath for a minute themselves). Anything below 62 kind of locks down or flattens the flavors of the wine. If your restaurant is known for wine then you should study up on t a bit, if it's not known as a wine restaurant then I would just take the lumps as they come because some uninformed customers will always find a reason to complain. This is an interesting question. The concept of drinking red wine at room temperature comes from the French, whose wines were to be drunk "chambre," or at room temperature. This expression, however, dates from the 1800's, when room temperatures were much colder than they are currently.
Red wines are typically cellared at 55 degrees F; this is WAY too cold a drinking temperature. Let the bottle warm slowly to the low 60's; I believe that anything under 62 degrees is too cold.
Emile Peynaud, in his book The Taste of Wine, determined that 18 C, or 64 F, is the ideal temperature for both whites and reds to be appreciated.

Red wine = room temperature.
Red wine will taste very different when chilled. The reason is quite simple. We all hear that the wine needs to "breathe" a little before drinking. This process of interacting with the air smoothes the flavor of the wine, it is a simple chemical reaction.
When the liquid is cooler, it slows the chemical reaction.
We only chill our red wine when we don't drink the whole bottle, it preserves it for tomorrow.
Your complainer could be the 1% (or less) of the drinkers that prefer the flavor of chilled red wine.

Red wine should always be served at between 64 and 68 degrees for the best flavor, NEVER chilled, and never at room temperature, ... unless of course, your room is between 64 and 68 degrees. This is easy enough to do, put the bottle in the refrigerator for about 10 minutes prior to service, that will get you as close to perfect as you're going to get without having a wine cabinet of your own.

Red wine should be served at room temperature (ideally the wine is decanted and left to air for a little while - may not feasible at a restaurant) . Blushes should be served slightly chilled. Whites should be chilled.
No offense, but from the complaint and response (and the temperature you served your wine at) you may need a new head chef.

I love my wine chilled so I would have been quite happy, but typically red wine is supposed to be around 70degrees F or room temperature when served so it makes sense that they complained...can't please everyone all of the time. Check out this site I think it's helpful
