RILLED RIB-EYE STEAKS WITH PARSLEY-GARLIC BUTTER
The garlicky herb butter is similar to the butter served with escargots in southwestern France. IMPROV: When preparing the butter, try a shallot instead of garlic, and thyme instead of parsley.
For the Parsley-Garlic Butter, mix together in small bowl, then cover and chill:
1/2 cup (1 stick) butter, softened
1 tablespoon finely chopped fresh parsley
1 tablespoon chopped fresh chives
1 garlic clove, pressed
2 teaspoons Cognac
Salt and pepper
Prepare barbecue (medium-high heat). Rub with generous amounts of salt and pepper:
3 1 1/2-inch-thick rib-eye steaks (about 1 pound each)
Grill steaks to desired doneness, about 6 minutes per side for medium-rare. Cut each steak in half, top with spoonful of chilled butter, and serve.
Makes 6 servings.

Garlic butter is terrific on steak, but don't melt the butter and brush it on, mash the garlic (and some salt, and some parsley if you have it) into softened butter and rechill. Then put a spoonful on top of the cooked steak. If you like it, you can add lemon juice to the garlic butter but I only like that on fish.

Personally I wouldnt use garlic butter, if you want garlic flavor try making a rub out of powdered garlic, salt and pepper and really rub it into the meat.

It would be beautiful!!! Garlic is medicinal. A kind of herb good for your health. Make it juicy and not well done to retain the garlicky flavour. Before serving sprinkle it with 2 Tbsp of Red Wine or Brandy. If not melt slice of cheese on top before serving.

hi there, Scooter; i'm so used to ingesting peppered steak.. so i'm gonna say no to that, and bypass with Garlic shrimp....under no circumstances had it notwithstanding..yet sounds good. Butter for my Biscuits, and Cauliflower.
