my Italian family (married into) makes their sauce fresh or if they can't they mix the paste and sauce together, the paste gives it consistancy and natural tomato flavor. We also put basil, onions,
and garlic, and meat if desired- Italian sausage goes great w/ manicotti. Also grate or sprinkle parmesan cheese on top, excellent.
goes great with Brushetta or just garlic bread

You've been given some pretty good advice already. Add the two together in a pan, and add some chopped onion, garlic, green pepper and celery chopped very fine if you have it. Add whatever Italian seasoning you have on hand (basil, oregano, rosemary, etc.) anything you have on hand. Then let it simmer for as long as you can to blend the flavors. If it starts to get too thick, add water, a tablespoon at a time, until it reaches the right consistency! Good luck (I went to the store yesterday before the storm hit, just to make sure I had a few meals on hand! I'm with you, I don't want to get out in this stuff either!!!)

Sauce
2 to 3 tablespoons olive oil
2 medium onions
1 medium green pepper, chopped
1 clove garlic, minced
1 tablespoon salt
1/4 teaspoon pepper
1 can (6 ounces) tomato paste
2 cans (14.5 ounces each) diced or crushed tomatoes
1 teaspoon dried leaf oregano
1/2 cup grated Parmesan cheese
Heat oil; sauté onions, pepper and garlic in the oil until tender. Add salt, pepper, tomato paste, tomatoes, and oregano. Simmer for 30 minutes, stirring occasionally. Stir in cheese before serving or serve cheese separately. Serve with hot cooked and drained spaghetti or similar pasta. Serves 6 to 8. Meat version: Sauté 1/2 pound of lean ground beef with the onions, peppers and garlic until browned. Proceed with recipe.

Hey I can help you out....you can make the manicotti and make two different sauces one white and one red. Since you have a short supply of tomatoes.
the white sauce is made with chicken broth, Parmesan cheese, d flour, milk, salt , nutmeg and a pinch of pepper.
Here is how you do it. for 2 cups of sauce measure 4 tablespoons of butter or margarine into a boiler pot and add the same amount of regular all purpose flour 4 tablespoons, put the heat on medium and stir until the flour and butter are combined. Now add 1 cup chicken broth or use bullion cubes and water together...and 1 cup of regular milk. add about 1/2 teaspoon salt to taste and a pinch of pepper and a dash of nutmeg. Stir until it thickens then add about 3/4 cup of grated white Parmesan cheese like you shake on pasta...After this thickens keep it on the lowest temperature so it does not stick to the bottom or burn. you can keep it warm over another pot of boiling water. Also if the sauce is too thick just add more milk, a little at a time. Note after you pour the white sauce over the stuffed pasta sprinkle parmesan or mozzerella over the pasta before baking until golden brown...and sprinkle with parsley if you have it. or even paprika for color...

The red sauce is very easy ....In a deep pot put in olive oil to coat the pan add about 1/2 cup onions chopped, 1/2 cup green pepper, 1 cup mushrooms sliced, 2 cloves garlic minced, 1/2 cup parsley, salt, pepper, oregano, basil, 1/2 cup dry red wine, dash of sugar and tomatoes you mentioned the paste and sauce then fill the cans with water and add that too. Add one bay leaf and one washed and whole celery stalk to lay on top ...you remove the celery and bay leaf at the end of the cooking. Let this come to a boil then turn down to simmer. Let it cook slowly for about 45 minutes. Hopefully this will be enough for your filled pastas having two sauces to pour over them. have two baking pans ready for each sauce...hope this helps you out and you are safe and warm. read about the snow in the Midwest...take care Mama Jazzy Geri in Florida...come on down!

YES just add some garlic, basil, italian seasoning, onion powder use all of these if you have them if not just use what you have and it will be fine! Sounds like a good comfort meal int he snowstorm. Enjoy!

Chopp some onions, garlic. Fry on olive oil. Add paste or sauce, or both. (is up to you). Add some oregano and parley. salt and pepper. Chichen broth, or water with chicken cubes.

fry up your hamburger & drain. add in celery, garlic, gr. pepper & onions & cook for a few minutes. add in your tomato paste & let that cook until it turns to orange from red. add in your can of tomatoes (chop them up a bit) pour in 5 or 6 cups of tomato juice (I usually just use water) add your herbs & spices & let it simmer until it reduces & thickens up
