I'm making my boyfriend some dinner tonight before he takes me ice skating and I have NO idea what to make!

Chicken cutlets marinated in italian dressing and cooking wine. soak them in the marinade for about 5 minutes, then bread them in 4c bread crumbs and bake about 30 minutes.

Rice-a-roni is a great side dish to make with this

Oh how I wish I could go ice skating.....sounds like fun. If I were going to make something I'd make this Italian dish. It's pasta the type is ZITI...they are barrel shaped and suck up all the sauce. I made some yesterday and it was great. Here is all you need and it takes a short time to make it. It will give you energy to skate.
Here are the ingredients:
1 lb. bag of Zitis
1& 1/2 lb or more of ground beef
1 bag of frozen sliced peppers tri colored red, green, yellow with onions added or if you have the fresh use them.
olive oil for the bottom of the pan
salt, pepper, oregano, basil, garlic
1 small can of drained mushrooms or fresh sliced
can of stewed tomatoes
can of tomato puree
can of tomato paste
1/2 cup dry red wine
1 tablespoon sugar
1/2 bunch of fresh parsley
1 bay leaf
In the deep cooking pot that holds about 6 quarts...
place olive oil and cook the meat when it's done add the peppers and cook about 5 minutes..add the rest of the ingredients and simmer for about 45 minutes
In another large pot boil water and salt it. Add the Zitis..and cook about 9 minutes read the pkg. directions..then as soon as they are done put in colander to drain do not rinse...mix with pasta zitis and place in long oblong baking pan and sprinkle over parmesan cheese ..place in 350 degree oven for about 25 or 30 minutes...check so the top does not burn...
Serve with a green salad and garlic bread...drink of your choice and save the dessert after you are finished skating....lol

Cook something you know he likes. Even if you are not sure what he likes, just know that he loves that you made him something.

I like to make my own recipies. Here is one:

Ingredients:
Talapia (fish)
Assorted Seasonings (such as Paprika, Lemon Pepper, and Parmesan)
Olive oil


Recipe:
Preheat oven to 375
Place talapia in a lightly greased pan.
In a small dish mix two table-spoons of olive oil with one teaspoon of Paprika, Lemon Pepper and Parmesan. Pour onto talapia.
Sprinkle a pinch of parmesan on top.
Place in oven and bake for fifteen minutes.

Serve with a side salad.

2. Add salad dressing and simmer for about 10 minutes. Add tomatoes during the last 5 minutes, just to heat them. Serve over hot spaghetti.

TIP: This is great using any type of bell pepper.

Oops! I Forgot to Make Dinner Chili


A quick and easy chili dinner.

Serving: 2
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes





2 16 oz can pork & beans
1 tbsp salt
1 chopped green bell pepper
1 lb lean bacon
1/2 cup ketchup
2 tbsp mustard
1 finely chopped onion
1 tbsp cider vinegar
1 chopped tbsp garlic
1/4 cup cocoa powder
3 tbsp chili powder






1. Look at the clock and see that it is 5:15 p.m. and Husband has to be at a meeting at 6:00p.m.
2. Run to garage storage area to grab 2 cans of pork and beans.
3. Stop at deep freezer for a pound of bacon.
4. Stumble on step into house from garage and drop one can on foot.
5. Yell OUCH!
6. Put frying pan on stove and turn on high heat.
7. Get ketchup, mustard, chopped garlic (if there is any), onion, and bell pepper out of refrigerator.
8. Cut frozen bacon into 1/2 inch wide pieces with kitchen scissors. (must be sharp)
9. Throw into hot pan.
10. Burn hand when grease spatters.
11. Hold hand under cold water.
12. Look for vinegar in pantry.
13. Stir bacon occasionally while chopping onion and bell pepper and holding hand under cold water when it stars hurting again.
14. Add onion, garlic, and bell pepper (if you can find one and can chop it before the kids see it) when bacon is almost crispy.
15. Stir occasionally while grabbing cocoa powder, chili powder, garlic powder (if there wasn't any chopped in the fridge) and salt from cupboard.
16. Look for vinegar in cupboard.
17. Welcome husband home as he enters kitchen and hits head on open cupboard door.
18. Kiss husband's owie and tell him "Now it will feel better".
19. Open cans of pork and beans while calling children to come and set the table.
20. Dump beans into pan and stir together and turn down heat to barely on.
21. Add spices to taste.
22. Tastes fine without vinegar, forget looking for it.
23. Heat thoroughly. (depending on what time it is, from 10 second

Salt
1 1/2 cups small shell pasta (about 6 ounces)
1 tablespoon olive oil
1 small onion, thinly sliced
1/2 small red pepper, thinly sliced
1/2 small yellow pepper, thinly sliced
1 garlic clove, finely chopped
1/4 teaspoon fennel seeds, crushed (optional)
1 can (14 1/2 ounces) diced tomatoes in juice
2 cod fillets or other mild white fish, 3/4 inch thick (about 6 ounces each)
1/4 teaspoon salt
Pinch coarsely ground black pepper





1. Heat large saucepot of salted water to boiling over high heat. Add pasta and cook as label directs.

2. Meanwhile, in nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add onion, red and yellow peppers, garlic, and fennel (if using); cook 5 minutes or until vegetables are tender, stirring frequently.

3. Stir in tomatoes with their juice; heat to boiling. Reduce heat to low and simmer 5 minutes.

4. Place cod fillets on top of tomato mixture in skillet. Sprinkle cod with salt and pepper. Cover skillet and simmer 8 to 10 minutes or until cod flakes easily when tested with a fork and turns opaque throughout, occasionally spooning sauce over cod.

5. To serve, drain pasta; spoon into two bowls. Top with cod and sauce.
