i bought some string cheese two days ago and forgot to eat it. it stayed on my desk the two days in a paper bag. i just remembered i had it and was wondering if it would be ok to eat...

As long as cheese is still closed (has not been open) the cheese is safe to eat. Now, If you refridgerate cheese even though it is closed then you have to keep it cold. The reason for this is; one of the ingredients in cheese is milk. If you don't eat the cheese after taking it out then the air and heat will hit it, which will contaminate it ( cause it to mildew).

Cheese is mold! When cheese is processed it is not refrigerated. It is however kept in a cool dark area. It will probably just smell really strong and not taste very good because of this. The biggest mistake people make is throwing cheese away when it gets a little white or green spots on it. If it is in string or shredded/graded form than there is not much you can do about it. If it is in block form just scrape off the white or green spots. The spots are pretty much just an advanced process of the cheese. Won't hurt you just taste bad and looks gross. Check out the Velveeta cheese in the grocery stores. They are located on the non refrigerated shelves. You can buy whole blocks of cheese in deli's or in country stores. They are sitting on shelves and can actually be years old. Its good there until the package is opened and exposed to air. The air causes it to ferment faster unless refrigerated. As to your shredded cheese, it has a lot of air in the package and will ferment faster non refrigerated. The only issue you will be dealing with if it taste too strong, not if it is bad or will hurt you. Stick it in the refrigerator for a couple hours to make it firm again. If it smells too strong when you open it let it air for an hour or so in the fridge opened. If it don't taste too strong for you than have at it.

Hi there, Dairy products are best kept under refrigeration. It's not worth taking a chance with your stomach. I'd toss it out and buy a new package of string cheese. It's always best to be safe instead of going through severe intestinal pains believe me it's not fun. Bacteria can grow and multiply so easily when the temperatures are right. String cheese is totally sealed. It is fine after a couple days.
