Great Class - learned a bunch - thanks!

You can simply say thank you for the class/lesson, or something like "I really enjoyed the lesson today Mr./Mrs so-and-so" or, sometimes just saying goodbye works just as well, since it shows you're paying attention, and have a form of communication to the teacher.
