i would prefer not to have any border tile sticking out but have plasterboard walls and have been told nothing is possible!

Use more adhesive on tiles thus pushing them out 5 mm or as your walls are plasterboard tile up to border height and cut a recess into the plasterboard(the height of border tile) to accomadate the difference in thickness of tile.This wouldn't need to be done too neatly or accurately as you'll be covering it anyway.

If its a problem of thickness, your main tiles thinner, use say fllor tile spacers UNDER your main tiles (these spacers are quite 'chunky' and should help) This will hold your main tiles away from the wall, you my have to us say 3 or 4 per tileto keep the tile steady. Work from the BOTTOM, whatever you do, the tiles with the amount of adhesive you will be using will have a tendency to slide down.

I assume that you mean thicker, not wider? If it was me I would be looking for border tiles of the same thickness. It will look a bit messy otherwise!
