Healthy Cucumber-Tomato Salad
3 large cucumbers, cubed
3-6 medium tomatoes, cubed
1 1/2 small onions, chopped
fresh basil, chopped
garlic salt
pepper
Add cucumber, tomato and onion to a bowl with a cover.
(preferably tupperware or something similar.) Add garlic salt, pepper and basil to taste.
Seal bowl and shake.
Refrigerate for at least 1 hour.
Healthy Bean Soup with Kale
3/4 tablespoon olive oil
6 cloves garlic, minced
3/4 medium yellow onion, chopped
3 cups raw kale, chopped (be sure to remove the spiny sections; there won't be many, but those that remain will be tough)
3 cups chicken broth or vegetable broth, split
1 1/2 (15 ounce) cans cannellini beans or navy beans, undrained,split
3/4 (28 ounce) can diced tomatoes
1 1/2 teaspoons Italian herb seasoning
salt and pepper
3/4 cup chopped parsley
shredded parmesan cheese
In a large pot, heat olive oil.
Add garlic and onion; saute until soft and the onion is transparent.
Wash the kale, leaving small droplets of water. Saute, stirring, until wilted and a lovely emerald green, about 15 min.
Add 3 cups of the broth, reserving 1 cup, 2 cups of the beans, reserving 1 cup, all of the tomatoes, herbs, salt and pepper.
Simmer 5 minutes.
In a blender or food processor, mix the reserved beans and broth until smooth.
Stir into the soup to thicken it nicely.
Simmer 15 more minutes.
Ladle into bowls; sprinkle with chopped parsley and shredded parmesan.
Serve with a nice loaf of crusty bread to soak up all the yummy broth!
Chicken Spaghetti
1/4 cup butter
1/4 cup flour
2/3 cup chicken broth
1/2 cup half-and-half or light cream
1/2 cup sour cream
1 cup parmesan cheese, grated
1/4 cup dry white wine, apple juice or white grape juice
1-2 garlic clove, minced
1 teaspoon lemon juice
1/2 teaspoon dry mustard
salt and pepper, to taste
3 cups cooked chicken breasts, cubed
8 ounces cooked spaghetti
2 teaspoons paprika
extra parmesan cheese
chopped fresh parsley
Melt butter in a saucepan and add flour stirring constantly.
When mixture thickens, add chicken broth, half and half, sour cream, Parmesan cheese, wine, garlic, lemon juice, dry mustard and salt and pepper.
Stir over medium heat until mixture again starts to thicken.
Add chicken and spaghetti noodles and stir well.
Place in a baking dish and sprinkle with paprika and extra Parmesan cheese.
Bake for 30 minutes at 350°.
Sprinkle with parsley and serve.
All dishes serve 6 servings

yahoo actually has a pretty decent recipe website, which would be a good place to start. i would suggest a big spinach salad with mushrooms, tangerines and raisins. the tangerines will provide enough juice so that you wont need a dressing and the raisins give it sort of an "unexpected" element. then maybe try a polenta dish, they are pretty easy, healthy, and can serve a lot of people. rachel ray also has a pretty cool recipe in her magazine this month, acorn squash halves stuffed with rice pilaf. its not that complicated but it looks like you put a lot of work into it. i'm assuming that you can view her mag on the web.

a good dinner for 6 ppl would be a pasta dish... i saw emeril make some awesome pasta dishes on tv yesterday!
go to foodnetwork.com and then find emeril live... he has a bunch of easy dishes- check out his "pasta sauces from italy" show and "platter" show... also "on a budget"
he has started using some really basic ingredients...
