I LOVE cooking salmon (baking it is my favorite), but I'm also a paranoid freak about foodborne illness. I know salmon doesn't need to be thoroughly cooked, and it's better when it's not well done. So how do you know when it's too pink in the center? Thanks!

When salmon is cooked enough to eat safely it will lose it's translucency and become opaque. It should also flake easily when tested with a fork.

I test by touch. When its somewhat firm to the touch, then I pull it out. Feel the salmon when its raw, and you should be able to see the texture of it, when its cooked its not soft and spongy anymore, its firm, but still has some give to it.
Cook fillets for about 10-15 min at 350. It doesnt take long.

If you want to feed salmon it needs to be cooked. Or frozen for at least 4 weeks if you want to feed it raw.. It contains potentially deadly parasites. Any other species of fish can be fed raw. And never feed cooked fish bones.

When it's fully done, fish should flake with a fork.

it comes apart easy when you cut it with a fork. It will just pull apart into flakes, but not be very wet and "fishy".

Stick a fork in the fish and make sure it comes out clean. Also, make sure the meat is white.
