I will tell you what chesse is... cheese is milk that was left to preseve bateria, organisms, in other words it was fermented until this happen you have cheese the more organisms it has the better the flvor of the chesse for example: yo uknow the cheese with the holes on it.. well the bigger the hole the expesivess the better . people actually pay for the hole because that holes was were organisms were.!

You got it it is all of that. The variation in taste is all depend on the process and the country where it was originated. I love Blue Cheese, Edam, Brie, Gorgonzola, and Stilton serve with water crackers with a glass of Chianti, an Italian Red wine. Try it, you will be in heaven

i believe that cheese is made with the curd off the top of milk. It may be what they call "blink" milk but man it sure does taste good between two pieces of buttered bread
