There are many choices today for diabetics. One can alter an existing recipe by replacing the sugar with Splenda. Be careful how much sugar substitute you consume in one day, however, because too much for your system and it can cause diarrhea. The "too much" is operative as each person's "too much" varies.
Another option is to purchase diabetic dessert mixes. Most diabetic cake mixes turn out very dry. Add 2 tbs of sour cream and they will be very moist. If you use chocolate mix, you may need to add some unsweetened baker's cocoa to kick up the flavor as some are bland. I would just very lightly dust the top of the mix while still in bowl and that should intensify the flavor adequately.
I used to make diabetic desserts for a health care facility and they said my Choco-Rum Parfait was their favorite. I made the diabetic chocolate cake in a cookie pan (half sheet pan) so it was only about 1" thick. I cut circles out to fit in a goblet. I put one circle in, then 1 ounce (2 tbs) of instant diabetic cheesecake mix w/ rum flavoring, another cake circle, a 2nd 1 ounce cheesecake layer and topped it with a strawberry. I used rum flavoring b/c real rum adds sugar.

Baked Apples with Yogurt and Walnuts
Adapted from the Joslin Diabetes Quick & Easy Cookbook (Fireside/Simon & Schuster)
(makes 6 servings)
6 medium tart apples, such as Gala, Granny Smith, or Jonathan, cored and peeled 1/3 of the way down
3 4-inch (10 cm) strips of orange rind, cut into thin strips
3 teaspoons (13 g) reduced-fat margarine
juice of 1 large lemon
about 1 teaspoon (5 ml) ground cinnamon
1 1/2 teaspoons (7.5 ml) spoonable brown sugar substitute
6 tablespoons (84 g) plain nonfat yogurt
1 tablespoon (8 g) chopped walnuts
Place the cored and partially peeled apples in a high-sided microwave-safe dish. Stuff the apples with orange rind strips and top each with 1/2 teaspoon margarine. Rub the pared flesh of the apple with lemon juice. Sprinkle with cinnamon and brown sugar substitute.
Fill the dish with water 1/3 of the way up the sides of the apples. Cover with plastic wrap and cook in the microwave for 4 to 5 minutes on HIGH.
Carefully remove the plastic wrap. Place the apples in individual serving bowls. Top each with 1 tablespoon (14 g) yogurt and sprinkle with some of the walnuts. Serve hot.
Per serving: 145 calories (14% calories from fat), 2 g protein, 3 g total fat (0.3 g saturated fat), 32 g carbohydrates, 5 g dietary fiber, 0 cholesterol, 38 mg sodium
Diabetic exchanges: 2 carbohydrate (fruit)

most stores cater to diabetics now....we always buy a sugar-free pecan pie for my grandfather and its not half bad!
