Apple ripening is due to a gas called ethylene. The apples themselves produce ehylene, especially if they are injured. It is true that one bad apple spoils the bushel. Other factors that control afterripening are oxygen, carbon dioxide, temperature, culticar cariety and whether the apple has been waxed.
