Fry some peeled shrimp in a tablespoon or two of olive oil with some garlic (powder or fresh) and Lowry's Salt. Boil some pasta, drain, then pour the shrimp, along with the oil and seasonings, into the pasta and mix. Then make a salad or boil your favorite veggie and serve.

If you're allergic to shellfish, though, I have another widely-loved dish:

Boil some round steak or roast (or you can do it with chicken too) in a corresponding amount of water and with salt, pepper, onions, and cumin.

When the beef is cooked, put it aside and grab a clove or two of garlic, some fresh onion, some cumin, some curry, and some salt and pepper. Put all of them into a food processor. It should be about a third of a cup of this paste. Put this paste into a medium sized frying pan with some olive oil and fry for a few minutes. Then add in a can of tomato paste. Mix everything up.

Take a big pot and pour in four to six cups of long grain rice, the tomato paste mixture, and the beef and broth until the rice is covered by an inch and a half of broth/tomato mixture. Mix and bring to a boil, then turn it to low and cover the pot for about a half hour. If you want to, you can add peas, carrots, corn, beans, whatever you please to the pot before covering it.

After twenty minutes, check on the rice. fold it around and see if you need more broth or if you need to drain more than a little bit out. Wait ten more minutes, then taste it. The rice should be neither soggy nor crispy. If it tastes done, it's ready to be served. If it is crispy now, add some broth and let it steam a little longer, if it is soggy now, use a wooden spoon to get all the soggy rice to the top and heat it uncovered for a little bit.

If you like it spicy, add some hot sauce. It tastes great with Frank's RedHot and a little sour cream.

Both of the above take less than an hour. Bon Apetit!

How bout pasta carbonara? Its delicious and very different from beef or chicken. You will need:

One box of egg fettuccine
6 eggs lightly beaten
2 cloves of garlic
palmful of grated parm cheese
2 or three splashes of heavy cream
crumbled bacon
sliced button mushrooms (optional...I never add them.)

While boiling your fettuccine, brown and crumble as much or as little bacon as you like. Slightly beat your eggs and start your chopped garlic in a pan with a little olive oil. When the fettuccine are done add drained directly to the pan with the garlic. Add all of your other ingredients and stir vigorously until nice and creamy.

NOTE: You should add your ingredients to the pan while the heat is off! The heat from the pan will be enough to cook the eggs. If you do this on the heat your eggs will be scrambled instead of creamy. In any case...it would still be yummy. :)

A big pasta bake. I like my taco casserole with tri-color rotini. But not tonight, we're having fried catfish and homemade tartar sauce with a side of tortellini in pesto. And I should bake some bread.

Three Vegetable Penne with Tarragon-Basil Pesto Recipe courtesy Rachael Ray
Show: 30 Minute Meals
Episode: No Meat, No Worries

1 pound penne rigate (with lines) pasta
Salt
1/2 pound asparagus, trimmed of tough ends
1 small zucchini
1/4 pound, haricots verts (thin green beans) trimmed of stem ends
1/4 cup pine nuts
1 cup basil, 20 leaves
1/2 cup tarragon leaves from 10 to 12 stems
Handful flat-leaf parsley
1 lemon, zested
1 clove garlic
1/2 cup grated Parmigiano-Reggiano, plus more to pass at table
Coarsely ground black pepper
1/3 cup extra-virgin olive oil, eyeball it

Heat a large pot of water to boil for pasta. Salt the water and add pasta to cook to al dente or, with a bite to it. Cut asparagus spears into 2-inch pieces on an angle. Cut zucchini into matchstick shapes. Cut haricots verts or green beans into 2-inch pieces on an angle. Add vegetables to pasta after penne has been cooking about 5 minutes. Cook veggies and pasta together 2 minutes.
While pasta cooks, toast pine nuts in a small pan until golden, then cool. Place nuts, basil, tarragon, parsley, lemon zest, garlic, cheese and a little salt and pepper in a food processor. Turn the processor on and stream in the extra-virgin olive oil until thick sauce forms.

Scrape pesto into large, shallow serving dish. Add a ladle of hot, starchy pasta water to the pesto. Drain penne and veggies and add immediately to pesto. Toss to coat pasta and vegetables evenly. Adjust salt and pepper, to taste. Serve with extra grated cheese to pass at table.
