Fool Proof Oven Baked Brown Rice
Just as the title says, it's fool proof, and yummy!
1 1/2 cups Brown Rice (uncooked)
2 1/3 cups Water
2 tsp Olive Oil
1 tsp Salt
Preheat the oven to 375 F and move a rack to the middle position. Spread the rice into an 8-inch square, glass baking dish. In a covered saucepan on the stove, bring the water and oil to a boil over high heat. Once it begins to boil, stir in the salt and pour over the rice. Cover the baking dish tightly with a double layer of foil. Bake for one hour, until tender. Remove from the oven and uncover. Fluff the rice with a fork, cover with a clean kitchen towel; let rice stand 5 minutes. Uncover for another 5 minutes, then serve immediately.

I'm with you, I've never cooked brown rice any other way since I tried it this way. The basic method is just to saute the rice in a bit of butter or oil for a few minutes in a skillet. If you have an ovenproof skillet, use that; otherwise transfer it to a baking dish, then add the amount of liquid called for on the rice package and bake it at 350, uncovered, for 45-55 minutes or until the liquid is absorbed and the rice is tender.
By the way, if you haven't tried using this same method on other types of rice or on barley or bulgur, you really should! The initial toasting plus the dry heat of the oven bring out a nutty quality that I love.
Here's one particular recipe I make often, in case you want to try it.
Mushroom Oven Rice
1 cup uncooked long-grain brown rice
1/2 stick butter (a little less still works OK)
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 cup sliced fresh wild (or ordinary) mushrooms
1 can chicken or vegetable broth
1/3 cup water
1 to 2 tablespoons soy sauce or Tamari
1 tablespoon chopped fresh parsley if available
In skillet, saute rice in butter 2 minutes or until it's golden brown and starting to smell. er, "toasty". Add celery and onion and cook 2 minutes, stirring. Add mushrooms and cook and stir until the celery is tender. Unless you're using an ovenproof skillet, transfer skillet contents to a shallow baking dish. Add the broth, water, and the soy sauce or Tamari. (Sometimes I throw in a bay leaf too.) Stir and cover with foil; bake covered for 30 minutes, then uncover and bake until liquid is absorbed and rice is fluffy, stirring occasionally, about another 15 or 20 minutes depending on the rice. If you have it, sprinkle finely chopped parsey over the rice before serving.

this is my recipe..hope it works for you...1 cup rice, 1 can beef consume, 2 beef bullion cubes, 1 can water, salt, pepper, and butter. add all to casserole dish dot with butter bake for about 45 minutes
