It is a first birthday cake for my daughter and I am no chef but I really want to do this. I can make a basic Victoria sponge cake no problem.
What can I cover it with so that I can write on it?

I have read buttercream(thought that went inside?)
buttercream icing (what is that?)
buttercrream and then icing?
Sugar paste-is that like soft icing that you roll out and cover cake with?

Arrgghhh. confused!!!
Any help or advice or websites really appreciated.

Put jam in the middle and butter icing on top:

Butter Icing=

Ingredients
140g/5oz butter, softened
280g/10oz icing sugar
1-2 tbsp milk
a few drops food colouring

Method
1. Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.
2. Then add the remaining icing sugar with one tablespoon of the milk.
3. Beat until creamy then add the food colouring and mix well.
4. Add extra icing sugar to thicken or a little extra milk to make more runny if necessary.

You can decorate it with coloured sprinkles etc. if you like.

You can put buttercream inside and outside a cake and use a spatula to smooth the outside - either make your own or buy the ready made stuff, most supermarkets have it. They also have the ready to roll icing and even icing that has been rolled so all you have to do is place it on the cake (with a little buttercream underneath so it sticks to the sponge). You can also buy tubes of coloured icing to write with. Have a look in your local newsagents if you still have time and pick up a cake decorating mag - they're full of useful tips.

Ready made icing is too heavy for a sponge and not as easy to use as it would seem. The simplest and easiest thing to do is mix some seived icing sugar with a little water so that it is a little bit runny and pour it over. It will spread itself evenly if you move the cake around and will set in about 10 minutes. You can make it any colour with a little food colouring. I make a delicious coffee icing this way by using a tiny bit of made instant coffee instead of water.

Raspberry Jam and Buttercream Filling 85g butter, softened Icing sugar to dust 175g icing sugar, sifted Few drops vanilla essence 2 tbsp raspberry jam Fresh raspberries (optional) To make the filling, beat the butter until creamy, then add the icing sugar in three lots, beating well between each addition. Add the vanilla essence and stir to combine. Spread the flat side of one of the cold sponges with the jam, adding a few fresh raspberries too, if you like. Spread the flat side of the the other with the buttercream. Place one sponge on top of the other, filling innermost, and press down gently. Dust the top with extra icing sugar, if you like

I would suggest Whit Mountain Frosting. Here is the recipe.
1/2 cup sugar
1/4 cup light corn syrup
2 tablespoons water
2 large egg whites
1 teaspoon vanilla
Mix sugar, water and corn syrup in a quart sauce pan. Cover and heat to a roiling boil over medium heat. Uncover and boil 4 to 8 minutes without stirring to 242 degrees on a candy thermometer. While mixture is boiling beat egg whites in a medium bowl with an electric mixer on high until stiff peaks form.
Pour hot syrup very slowly in thin stream into egg whites beating constantly on medium speed. Add vanilla. Beat on high speed for 10 minutes or until stiff peaks form.

Butter cream frosting is frosting made with powdered sugar, butter and milk.

How about a nice lemon glaze? It's not too sweet for the sponge cake, but you would still be able to write on it. Sorry I don't have a recipie, but it's mainly lemon juice and confectioner's sugar.

THey sell frosting that you can heat up and pour over a warm cake. It works well for sponge cake. It comes in Chocolate and vanilla. I think its betty Crocker.

Get down to the super market n buy some ready to roll icing and some sugar flowers or something to decorate it with.

you can add butter to icing to make buttericing this can go inside with jam

just make some icing add a bit color and ice the top, can using piping bag with icing in using different color of course,to write Happy Birthday


might just be better off going to Morrisons or Asda and buying one hun

You can get ready-to-roll icing in Tesco; easy, rolling pin to flatten out, jam to stick to cake, decorate, done!
