adding a bit of milk can help but truth is just whisking them will add enough air to make them fluffy. the real trick come in the cooking process. you need to use lower heat and stir constantly. doing this will cause the curd to stay small making for a nice fluffy egg. if you just thro them in a hot pan and let them got the curds will be large and dense this is ok for an omelet but bad for yummy scrammbled eggs. oh and leave out the cheese until the end. its not an omelet so the cheese is a garnish not a filler.

When I make scrambled eggs I separate the egg whites and yolks. I only use 1 yolk for every 3 eggs. I add a splash or 2 of milk to the eggs, and whisk them up. I let them sit in the bowl for a few minutes before I put them into the pan to cook them. My eggs are always light and fluffy.

I always find adding a touch of milk to the scrambled eggs helps. Plus the longer you beat or scramble the eggs the more air gets into the eggs giving you lighter and fluffier. . .use a whisk too instead of a fork.

When actually cooking the eggs don't constantly stir them at first. Pour them into the pan and don't start pushing them around until you see the cooked egg start bubble up.

Add a little water (1 tablespoon per egg). It makes the eggs fluffier than milk does. Milk will actually make scrambled eggs or omelets runny and can cause them to burn.

take two tablespoons of cornstarch mix it with 1/3 cup milk and put two eggs into the mixture then beat the mixture with a fork or whisk for 30 seconds or until mixed.then cook them in a microwave safe soup bowl for 2-3 minutes or cook in a small pan on the stove.stir until cooked.

put your butter or oleo in frying pan. mix your eggs with a fork. pour in hottish pan, and continue stirring and turning with your fork. the trick lis to NOT let them cook flat on the bottom like a crepe. good luck and keep trying makes for great eating.I read the above answers. milk or water will slightly change the egg taste. I never used either.
