It's early Saturday morning, I'm out of coffee grounds, and I'm too lazy to go to the store right now.

You can drink it all right but won't get the pleasure of an aromatic cup newly brewn from freshly roasted and ground beans. Quid pro quo story, really. If you are lazy and want your coffee pronto, go for it, but keep your expectations low. The caffeine will boost your energy level and you might venture out for a second cup in your favourite coffee shop which should invariably taste better and reward your efforts.
For optimal storage of open coffee bags use a vacuum food saver. The vacuum pump simply simply extracts air from the pot you so that you can keep delicious coffee aroma inside and humidity and foreign smells outside the pot. Don't put the pot in the frigde, kitchen cabinet would do just fine.

As long as it was in fridge. I would think it wasn't the best but you gotta do what you gotta do.

I'm sure it won't kill you - though I wouldn't go anywhere near it. Ever.
