Diabetic Birthday Cake
3/4 cup diet margarine
1 1/2 cup non-nutritive sweetener*
4 teaspoon baking powder
1/2 teaspoon salt
3 cup flour
1 cup skim milk
1 teaspoon almond extract
3/4 cup egg whites(4-5)

* Sugar Twin is best for this Preheat oven to 375 F. Cream margarine and sweetener. Sift baking powder, salt, flour, then add alternately with skim milk to creamed mixture. Add almond extract, and beat egg whites until stiff peaks form, and fold in. Pour into 2 well-greased 9" layer pans. Bake about 30 minutes. Cool a few minutes, then remove from pans and cool further on wire racks. Top with Creamy Frosting. Makes 1 two layer cake.

I agree with the woman who has the diabetic child. I am a Type I, diagnosed as a 4 year old decades ago. I too find that Splenda and other sugar substitutes do affect my blood sugar. Completely avoid anything labelled "low carb." They make it low carb by adding tons of sugar substitutes that may not affect carb count for non-diabetics, but do a terrible job on the blood sugar of a diabetic. Go for the real thing and just be sure to accomdate for the extra carbs and don't overeat. A helpful tip I found is that the higher in fat the cake is the less sugar it usually has. Therefore, my favorite choices are cheescakes from a good baker who knows a quality cheesecake does not need tons of sugar.

Original recipe yield:
1 -10 inch bundt or tube pan

US METRIC

SERVINGS About scaling and conversions

INGREDIENTS
2 cups raisins
3 cups water
2 eggs
3 tablespoons liquid sweetener
3/4 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 cups all-purpose flour
1 cup chopped walnuts
1 cup unsweetened applesauce
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt or tube pan.
In a saucepan combine raisins with water and cook until the water is absorbed, cool.
Combine eggs, applesauce, vegetable oil, vanilla, and liquid sweetener. Mix well. Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into egg mixture. Stir until just combined. Mix in raisins and chopped nuts. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C) for one hour.

Cakes are fun desserts, simple to prepare and do not have exceptionally high amounts of added sugar. Most of the sugar is found in the icing or frosting. If you are counting carbohydrate grams, you'll find that a mere tablespoon of icing can have as many carbohydrates as a whole apple or a large bowl of strawberries. Alternate toppings for cakes which you might find pleasing include:

Fruit
"Lite" Whipped Topping
Cream Cheese Frosting
Glaze

These toppings are low in added sugar and fat and allow you to have your cake - and eat it too!

CREAM CHEESE FROSTING
Note:
½ recipe will frost a 9x13 cake
Full recipe will frost an 8 inch double layer round cake


Nutrition Information per Serving:

Yield: 4 cups
Serving size: 2 tablespoons
Calories: 35
Carbohydrates: 3.5 grams
Protein: 3 grams
Fat: 1 gram

If making Chocolate Cream Cheese Frosting (below), there is no nutritional difference if using cocoa; if using baking chocolate, fat content will increase by .5 grams.

Ingredients

3 eight ounce containers fat-free cream cheese
1 tablespoon butter flavor extract
8 packets Equal®
2 cups "lite" whipped topping


Preparation

In deep mixing bowl, combine cream cheese and butter flavor extract.

Mix at medium speed with electric mixer.

Add Equal® and beat until smooth.

Add topping and continue beating until all ingredients are thoroughly mixed.

Must be refrigerated.

To make Chocolate Cream Frosting, add 2 ounces of melted unsweetened chocolate or ½ cup cocoa to the above recipe and blend thoroughly.

Preparation

In a small saucepan, combine cornstarch and dry milk and mix.

Gradually add water, stirring to dissolve dry milk and cornstarch. Add margarine.

Cook over low heat, stirring constantly, until glaze thickens and boils.

Remove from heat and add butter flavor extract and Equal®, stirring to blend.

Note:
Use approximately ½ cup glaze for cinnamon rolls, breads (sweet variety), bundt cakes, etc. Keeps well when refrigerated

Orange Cake
Ingredients:
1/3 cup reduced calorie margarine, melted
1/4 cup granulated brown sugar substitute
1 tsp. powdered sugar substitute
1 egg
1 1/4 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon
2/3 cup unsweetened orange juice
Vegetable cooking spray
Combine margarine, sugar substitutes and egg. Beat at high speed with an electric mixer for 2 minutes. Combine flour, baking powder, soda and cinnamon, stirring to blend. Add flour mixture to creamed mixture alternately with orange juice, beginning and ending with the flour. Beat at low speed after each addition. Spoon batter into an 8 inch square pan coated with cooking spray. Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean when inserted. Note: You can make two of these and layer them if you wish or bake them in round pans instead. 9 servings.

Applesauce-Spice Cake
Ingredients:
3 cups water
1 1/4 cups raisins
2 1/2 cups unsweetened applesauce

3 cups self-rising flour
3 tsp. ground cinnamon
1/4 tsp. baking soda
2 tablespoons vanilla extract
cooking spray
Combine 2 1/2 cups water and raisins in a heavy pan and bring to a boil. Boil until the water evaporates or is absorbed by the raisins. (watch carefully) Remove from heat. Add applesauce, eggs, sugar substitute, oil, and remaining water. Stir to combine. Sift together flour, cinnamon and soda, then gradually add to the applesauce mixture with vanilla, stirring after each addition. Spoon batter into a 10 inch Bundt pan coated with cooking spray. Bake at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes; remove from pan and cool on rack. Frost as desired. Makes 28 slices.

Make whatever cake you want and just use Splenda instead of sugar. It's a little more expensive but you can find it in most supermarkets with the sugar.

very easy, get normal cake reciepe from internet or any cookbook , instead of sugar substitutte splenda, same w/frosting or use creamcheese and a little lemon juice w/little splenda

my grandmother was a diabetic, there are acceptable sweetners for diabetics on the market - look in the baking isle
