when I buy a large amount of cheese,I cut of the portions that I'm sure I would use in a week,the rest of same size portions,I wrap in Ziploc squeeze the air out and freeze,the portion I kepted out ,I also put in ziploc,get the air out,then I put it on the top shelf way in the back,I seem to have pretty good luck doing it that way,

First off, air is cheese's worst enemy. When cheese is exposed to air, mold forms.
The best way to store cheese is to wrap it tightly in plastic wrap. Then, place the wrapped cheese in a plastic storage bag, ensuring all air is removed. Store in refrigerator.
Cheese can be frozen for up to three months. It can be stored longer, but the taste will be compromised.
TO thaw frozen cheese, do so in the refrigerator. Never thaw cheese on the countertop.

what do u mean by modern cheese?? We keep all our cheese in the fridge. Now we grate all of the cheddar and keep it in a container because it makes it easier if you are making an omelette or something like that, and you also dont need to put clingfilm or anything over one end so it doesnt go weird or hard (if u dont put anything over the end).

Soft cheeses need to be kept in a fridge, in a container unless you want everything to smell of cheese.
Hard cheeses can be kept in an air tight container, but last longer in the fridge.
**If you add a spoofull of rice to the container, it will absorb any moisture.
