Pan fried in butter and olive oil with a bit of salt and pepper, lemon juice and dry white wine.......delish!!! Depending on the thickness, about 2-3 minutes per side.....DON'T OVERCOOK COD OR YOU'LL BE DISAPPOINTED.....IT COOKS VERY QUICKLY, DUE TO THE TEXTURE OF THE FISH.....
Cod is a very delicate fish, both in texture and taste.....you don't want to cook it with too many spices, as it will overwhelm the taste of the fish.......With cod, keep it simple......

If it's really fresh, then the simpler the better.Place washed fillets in baking dish sprayed with vegetable oil spray or coated with melted butter. Place small bits of butter over the fish. Sprinkle with sweet paprika and bake for 20 minutes or until the fish is done. (flakes when you place a fork in it.)

I think it's nicest when poached with two parts water and one parts fresh lemon juice, then you can use the stock to make a brilliant fish sauce. then serve with fresh steamed green beans and maybe roasted sweet peppers.
