i have wanted to make this ever since i went on holiday to hungary

Low Carb Crockpot Hungarian Goulash
--------------------------------------------------------------------------------

2 pounds round steaks, cut in 1/2-inch cubes
1 cup onion, chopped
1 clove garlic, minced
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons paprika
1/4 teaspoon dried thyme, crushed
1 (14 1/2 ounce) can tomatoes
1 cup sour cream
Put steak cubes, onion, garlic in crockpot. Stir in flour and mix to coat steak
cubes. Add
all remaining ingredients except sour cream. Stir well. Cover and cook on LOW
for 8 to 10
hours or on HIGH for 4 to 5 hours, stirring occasionally. Add sour cream 30
minutes before
serving, and stir in thoroughly.

Yield: 6 servings


I have more goulash recipes but German style which not much different from Hungarian style (we are Hungarian family so we know ;) you can see find them in the source url :) if you want Mexican goulash, let me know, i can help for this one as well :D oh, btw the above recipe is low carb so doesnt consist bacon. if you would want the one with bacon here it is

Beef Goulash

Amount Measure Ingredient -- Preparation Method

4 slices bacon -- chopped
3 pounds boneless beef shank -- trimmed, and
cut into 2" cubes
Kosher salt -- to taste
Freshly-ground black pepper -- to taste
3 tablespoons all-purpose flour
2 tablespoons olive oil
2 medium onions -- chopped
3 garlic cloves -- minced
2 roasted red bell peppers -- peeled, sliced
3 tablespoons Hungarian sweet paprika
2 teaspoons caraway seeds -- toasted, ground
2 tablespoons red wine vinegar
1 can whole peeled tomatoes - (15 oz) -- hand crushed
6 cups low-sodium beef broth
4 russet potatoes -- peeled, and
thickly sliced
1/2 cup sour cream
Chopped flat-leaf parsley -- for garnish

Place a large heavy pot over medium heat and add the bacon. Fry for
about 5 minutes until crisp and remove to a paper towel and reserve.
Add the beef to the hot bacon fat and brown it evenly on all sides,
turning with tongs; season generously with salt and pepper. While the
beef is searing, sprinkle the flour evenly in the pot and continue to
stir to dissolve any clumps. Add a little oil if necessary to keep
the meat from sticking to the bottom of the pot.

Toss in the onions, garlic, roasted peppers, paprika, and caraway;
cook and stir for 2 minutes until fragrant. Stir in the vinegar,
tomatoes, and broth. Bring to a boil, then lower to a simmer and cook
for 1 hour, covered, stirring occasionally.

Add the potatoes. Crumble the reserved bacon into the stew and
continue to simmer for 30 minutes, partially covered, until the
potatoes are tender. Season with salt and pepper. Remove from heat and stir the sour cream into the goulash just before serving. Garnish with the chopped parsley.

This recipe yields 8 servings.

1 (28 ounce) can tomatoes, cut up and undrained
1/2 teaspoon salt
1/4 teaspoon black pepper
2 bay leaves
1 (8 ounce) carton sour cream
4 cups hot cooked noodles

Stove Top
Low Sodium
In a dutch oven, brown meat, half at a time, in hot oil, cooking the onion and garlic with the second batch of meat.
Drain off fat.
Return meat, onion and garlic to pan; stir in flour, paprika, thyme, 1/2t. salt and 1/4t pepper
Add undrained tomatoes and bay leaves.
Bring to a boil; reduce heat and cover.
Simmer for 1-1 1/2 hours or until meat is tender.
Discard bay leaves.
Stir in sour cream and heat through- do not bring to boil.
Serve over hot cooked noodles.

Hungarian Goulash


INGREDIENTS
1/3 cup vegetable oil
3 onions, sliced
2 tablespoons Hungarian sweet paprika
2 teaspoons salt
1/2 teaspoon ground black pepper
3 pounds beef stew meat, cut into 1 1/2 inch cubes
1 (6 ounce) can tomato paste
1 1/2 cups water
1 clove garlic, minced
1 teaspoon salt
DIRECTIONS
Heat oil in a large pot or Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.
In a medium bowl, combine paprika, 2 teaspoons salt and pepper. Coat beef cubes in spice mixture, and cook in onion pot until brown on all sides. Return the onions to the pot, and pour in tomato paste, water, garlic and the remaining 1 teaspoon salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

INGREDIENTS
2 tablespoons butter
2 large onions, diced
2 pounds flank steak
1/8 teaspoon caraway seed
1/4 teaspoon dried marjoram
1 clove garlic, minced
5 tablespoons paprika
2 cups water
4 large potatoes, peeled and cubed
salt and pepper to taste
DIRECTIONS
Melt butter in a large soup pot over medium high heat. Saute onions until soft, then add beef and brown. Stir in caraway seed, marjoram, garlic and paprika. Pour water over all, lower heat to low and simmer for 2 1/2 hours.
Add potatoes and cook until tender, another 45 minutes to 1 hour. Season with salt and pepper to taste and serve.
