I live in a Roman Catholic country, which means, willing or not, you're catholic the moment you see the light. Luckily, I sent a letter to the church stating that I do not want to be a member of said church, and as such I am noted in the birth register, as "excommunicated". How ever, it seems I cannot undo my vows and am Catholic for the rest of my life. But how can I swear something to a god I do not believe in, nor respect ? Is there seriously nothing to be done to undo my baptism vows ?

Of course, feel free to send me a mail if you wish to debate. It's my decision, after all.

Certainly you can! Just deny God for who He is and deny Christ as your saviour. It's that simple. Then when you die and find yourself at the feet of Jesus Christ, He will say to you, "take leave of me, I never knew you".
Question is 'Why' would you?

Wow, I never heard of something like this in these times!
I do not clearly understand what you mean when you state
" I cannot undo my vows.." what vows? Plus what prevents you to declare these vows as not my truth as of this moment on?
Baptism is a ritual created by the participating religion(s) just the same as other various rituals. There are others such as; wedding ceremonies and funerals. However; these two rituals are generally supported and recognized by local authorities as well.
On the other hand a Baptism is generally not on a level as is a marriage / funeral.
Simply declare to self that you are no longer and so be it.

Well unfortunately you are the loser, but since you don't believe any longer in God Almighty the baptism is negated by your faithlessness, by your rebellious attitude and your sinfulness and your reprobate mindset. So go ahead "eat drink and be merry for tomorrow you die" in that the Word of God calls you a fool, because you reject the only truth the Only Wise God. I am not a catholic, but I am a Christian who believes in the God you are rejecting, but hey thats your God given choice - be ignorant, be rebellious, be of a reprobate mind for in the end you will find that your choice and the cpnsequences to those choices that you are making are will be a detriment and in the end you will not like the "rest of the story" for your eternal existence - but hey its fun now - later it will not be so much fun. So have a nice day.

Religeon is a choice. If you do not participate in nor believe in something than you do not claim it. You do not need to undo your baptism. If you really do not believe in god than baptisms mean nothing anyways.

If you do not believe in God, then why do you care about vows? I suspect there's a believer inside you, trying to get out, though not, perhaps, via the Catholic Church.

you do not have to be what you don't want to be. just because they say it, doesn't mean that it's true. God is the one who truely matters so the fact that you do not believe in your heart is enough for God. i am a christian, however i do not believe in a lot of catholic teachings. hopefully you can one day worship the Lord without being catholic.

You did not choose your baptismal vows. They are not representative of who you are. It is merely a law within your country, but has no bearing on your spiritual soul. I would suggest that you attempt to look forward and not back. See the past as what someone else chose for you and your future as what you control. The two are totally separate and you are in control of the now and future.

Free yourself! The chains you have made in your mind can be broken. It's all in your own perception. Why waste your energy trying to "undo" something that was symbolic in the first place. Believe what your heart tells you to believe and forget the past.

Baptism leaves an indelible mark on the soul, so there's nothing you can do about that. If you wish to renounce your baptismal vows, I'd suggest shaking your fist toward heaven, shouting, "I renounce my baptismal vows!"

No you cannt undo the vows you make with God, and man / church-made rules have no rights or power to undo them. And bullshit with "excommunications". Any vows for that matter.. including marriage. When you divorse, God still see both of you as married and when you remarry before your spouse die, he sees it as adultary.
