I.e. the bread you get from bakeries that you should eat on the same day to get the full pleasure. It tastes so good you can eat it just on its own?

I think technically, it's gluten (from the flour) that makes the bread chewy -- the more gluten you have, the chewier the bread. The sweetener is what makes it sweet.

I make home-made bread in a breadmaker, and I use honey. I had the most fabulous bread yesterday -- sweet and just a little bit chewy, and it was half wholewheat, so I could eat it without guilt. But, making good bread takes a good recipe, patience and time. I think those are the real "secret" ingredients! You are very lucky to have a bakery that provides really good bread!

I do believe you are talking bread from a bakery and not frozen bake off junk from the grocery store.If you are eating great bread it was started when you were sleeping or just getting up in the morning.What makes great bakery is TIME not the spice but time for the dough to ferment and grow on it's own, the longer floor time and bench time the more wonderful and complex flavors it will have.(The reason you should eat it the same day is because compared to most bake off garbage it has very little preservatives if any)

Yeast! This gives it a distinctive flavour and aroma. I am the same, I cannot resist it - despite being allergic to wheat!
