Very good question, Mk...........geez, make me do some actual work on a Saturday.......you said Vegetable, so first, let's weed out some of the other possible answers, due to searches for recipes with different veggies:
Beans really aren't categorized as a vegetable, as they are in the legume family
Rice and wheat shouldn't be on the list either, because technically they are both grains, not vegetables......
Tomatoes are, by the USDA technically categorized as a fruit, as is an avocado (which wasn't listed, but just FYI)
Onions and Garlic aren't technically vegetables, either, as they grow subterranely (under the ground) and are classified and categorized as tuberous bulbs.........but, here's what I did find out, searching foodtv.com:
Recipes, in ascending order of the number of recipes are as following:
Beans: 2,340
Potatoes: 3,142
Tomatoes: 5,538
Now, this blew me away, but the winner of the pack is, here ya go
Onions: 10,266 so, I would surmise that with over ten thousand uses, Onions are the clear winner........
