how do you start a subject and skip into a new one? (some lines to start a new subject or start one?)

There's actually a name for those one or two sentences that broach a new subject. It's called a segue.

For example, if you're talking about the weather, say something like, "I hear it's going to get really COLD this weekend.
I'd love to go out with you Saturday afternoon, but I'm not sure whether we could do a picnic outside or not due to the COLD WEATHER. Why don't we plan on going to see a movie instead?"
