Poke the center of the cake with a toothpick. If the cake is done, the toothpick should come back out clean. Touch the center of the cake very gently. If the cake is done, the center should spring back up. Look at the edges of the cake. If the edges are a little darker than the rest and are pulling away from the rim of the pan, the cake is done.

you can use a wooden toothpick in the center and see if it comes out clean, press gently in the middle and see if it springs back for some cakes, generally an even browning is a good sign, check to see if the cake is pulling away from the edges of the pan, and also the smell can be a good indicator in some cases... I've been baking and decorating cakes for a while and can normally 'smell' a finished cake within five minutes of it's finished baking time...speaking of time, you can also use the estimated time given on the box or recipe..i usually use the later time to make sure AND the cake will continue cooking a bit in the pan as it cools..good luck! :)

To test brownies test an inch or so from the edge of the brownies (depending on the doneness you desire - you'll get to know). For more people some brownie sticking to the toothpick in the center of brownies is fine, in this way, you also protect the outer brownies from becoming overcooked.

toothpick, if it comes out clean, its done.
If no toothpick, press gently the center of the cake. If it bounces back, its done. If not, put back in oven and try again in 3-5 minutes.

I use a toothpick, and if I'm out, a simple butter knife does the job. Nothing sticks to either, the cake is done. :-)

toothpick or bamboo skewer in the middle, if the batter sticks to the pick it is not done yet if it comes out clean, its done also if it yeilds to the touch in the middle it needs to cook a little more.
