Cheese was "discovered" 6,000 years ago in or around what is modern day Iraq by nomadic tribes. They carried pouches made of sheep's stomachs that contained milk. The agitation of the milk and the rennet, an enzyme found in the stomachs of sheep, causes the coagulation of the milk into cheese.

I heard a story of how cheese was discovered. I heard that a shepherd had stored some milk in a sheeps stomach (which I guess was commonly used to hold drinking liquids) and the rennin (enzyme that curdles milk in cheese making) that is naturally found there curdled the cheese.
It's probably not true, but that's what i've heard.
