Do make and taste some of the following chicken recipes:
Chef: Niru Gupta

Ingredients: 250 gm chicken breasts-boneless, cubed
1/2 cup white wine
2 tbsp butter
1 tsp oil
2 tbsp refined flour
1 cup chicken stock
salt to taste
1/4 tsp black pepper
1 cup sour cream
200 gm dried noodles
1 tbsp butter

Method: Pierce the chicken pieces with a fork, on all sides and marinate in the wine.

Heat the butter and oil and add the chicken pieces over high heat, and turn around till well coated with the fat.
Add the flour and mix well over low heat, till slightly colored. Then add the chicken stock, bring to a boil and then simmer till chicken is cooked through.

Add the salt, pepper, and sour cream, simmer till heated through.

In the meantime, boil the noodles, drain and mix in the butter. Serve chicken over the cooked noodles.

Ingredients: 250 gm bones of chicken (can be combination of bones and left-over chicken)
6 cups water
1 cup onion-coarsely chopped
4 tbsp celery-chopped
1 bay leaf
2 cloves
2 peppercorns
salt

Method: Place all the ingredients in a pressure cooker and cook for about 15 minutes.

Strain the soup and season according to taste, and use any flesh that is there for sandwiches or salads.

Ingredients: Oven Temp: 350 F- 180 C

1 kg chicken (broiler)-cut into pieces
2 tbsp oil
1 green pepper-cut into strips
1/2 cup onion-chopped fine
1/4 cup tomato puree
1 1/2 tsp salt or to taste
1/2 tsp powdered black pepper
1/4 tsp thyme
1/2 tsp chilli sauce
1/2 cup peanut butter
1 cup stock or water

Method: Heat oil and brown chicken pieces on all sides over high heat. Remove and keep aside.

To the same pan add the onion and saute till tender.

Stir in the tomato puree, salt, pepper, thyme, chilli sauce, peanut butter and stock.

Mix in the chicken too and transfer the mixture into a baking dish.

Bake, uncovered, in a pre-heated oven for 45 minutes or so, till the chicken is cooked through.

Ingredients: 1 1/2 cups chicken-cooked and shredded thinly
1/2 cup capsicums-shredded fine
1/2 cup onions-sliced thin
2 tsp garlic-chopped fine
2 tbsp oil
200 gm noodles-boiled and drained well
2 tbsp vinegar
1/2 tsp soya sauce
1 tsp sugar
salt to taste
2 tbsp corn flour
oil to deep-fry

Method: Mix together the vinegar, soya sauce, sugar, salt and corn flour and add enough water to make up to a cup. Keep aside.

Heat the 2 tbsp oil and add the onions and garlic. Saute till a little soft.

Add chicken and capsicum and stir-fry over high heat for a minute.

Add the sauce ingredients and bring to a boil again.

Deep fry the noodles over high heat till brown. Drain.

Transfer noodles to a serving dish, pour the chicken mixture over and serve.

Ingredients: 250 gm chicken mince
2 eggs-slightly beaten
3/4 cup refined flour
1/2 tsp garlic paste
1/2 tsp ginger paste
1/4 tsp ajino moto-optional
water
oil for deep frying
2 tbsp oil
1 tsp finely chopped garlic
1/2 cup finely chopped onions
1 large capsicum-chopped fine

For sauce, mix together:
3 tbsp corn flour-blended with 1/2 cup water
2 tbsp vinegar
2 tsp salt
2 tsp soya sauce
1/2 cup tomato puree
2 tbsp chopped celery or 1/4 tsp celery salt
1/4 tsp ajino moto-optional
2 cups water

Method: Mix together the chicken, egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thickish batter. Leave thus for 5-10 minutes.

Heat the oil and keeping the heat high drop heaped teaspoonfuls of batter and fry to a golden brown. Drain on absorbent paper till required.

Heat the 2 tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and turn around a few times.

Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.

Add the fried balls, turn around a few times and serve.


Now, why not taste some mutton and lamb from the following:

Ingredients: 1 kg lamb leg
1 kg potatoes peeled & finely sliced
1/4 cup brown onion soup powder
4 medium onions sliced into rings
15-20 rosemary sprigs
3 cups stock

Method: Brown the lamb in a pan with some oil and set aside.

Grease a baking dish and evenly layer the potato, rosemary, lamb and onions with a small sprinkling of soup powder between each layer.

Pour the stock evenly over the layers.

Now bake for 2 hours or till the meat is soft and tender.

Serve garnished with parsley.

Ingredients: 500 gm mutton pieces washed and wiped
1 cup coarsely chopped onions
2 tbsp butter or oil
1/4 cup refined flour
2 tsp salt
1/4 tsp powdered black pepper
4 cups water
1/4 cup thickly sliced carrots
3/4 cup diced potatoes
1/4 cup french beans cut into 2-3 pieces each
1/8 tsp nutmeg

Method: Heat butter or oil and add onions and stir-fry till soft. Increase the heat to high and add meat. Stir-fry till opaque.

Lower heat, add flour and keep stirring till pieces are coated. Add water, bring to a boil, and then simmer till meat is half done.

Add beans, potatoes, carrots, salt, pepper and nutmeg. Continue to simmer till meat is tender. Chicken stew is made similarly, but cooks faster.

Ingredients: 1 kg baby lamb brain
salt to taste
15 ml lemon juice
1 tsp red chilli?powder
1 tsp turmeric powder
30 gm ginger garlic paste
100 ml tomato puree
oil to saut?font>

Method: Wash the brain properly.

Marinate the brain with lemon and the powdered masalas.

Take oil in a vessel, add a little whole garam masala and saute with ginger garlic paste. Then add the tomato puree to the marinated brain and cook well till it disintegrates.

here's my favorite chicken;....line a pan with aluminum foil (makes for easy clean up and less mess...) preheat oven to 375...clean some chicken tenderloins, place in pan and cover with italian dressing, making sure dressing is all around each one and there's some extra...fold the foil over so chicken is completely covered and bake for half an hour...check for doneness...i use this in salads and sandwiches during the week and its super easy to make....only 2 ingredients.. good luck! :)
