They'll drive you out of business. Israelis expect to bargain over everything and are usually very effective bargainers. It will work to your disadvantage. If I were you, I'd target more demure and laid-back travelers than Israelis...

I am Israeli and I loveeeeeeeeeeeee Israeli food because its more healthy than American Food. So why don't you visit each Israeli restaurant or kosher store to get some ideas. Its really nice of you open a store for Israelis. So far i know that Israelis like to drink really dark coffee and tea, just like Americans. When Israelis travel, they love to be open for anything to learn something new. Remember Its depend on Israelis, If they are Jewish, they will be picky because of their rules. If not really that strong Jewish, they will be open for anything. Have you visit Israel yet? If not, why don't you go? You will love it, so many things for you to check it out. :) good luck.

Israelis like everything that is special and interesting as well as tasty like any other western nation.
If you want to open place for Israeli food it should have:
1. Chicken schnitzel + french fries + vegetable salad
2. Falafel in pita bread.
3. Hummus + tehina (tahini).
For the religious Jews you may try to open a Kosher place.

It depends where you want to open it. What kind of Israeli travelers will come to that area, will they be backpackers or affluent tourist? Israelis are a curious people, they are interested in anything that tastes or smells new. So just try and see.

As an Israeli, I can tell you, by our supermarkets, restaurants, and myself, that Israelis like fruits and vegetables, sauces (low-fat!), soups, italian food, asian food (from a lot of countries) and more...
In my opinion, sweets and deserts in Israel are the best in the world (based on many journeys). There's a mighty selection. Salads are also loved by many. We make special breads, also the best in the world for my opinion. We like McDonald's as well, but not like other, more healthy places.
