Its like a coating they dip fries in. I eat it all the time but I dont know how to make it.

BEER BATTER

1 3/4 c. sifted all purpose flour
1 1/2 tsp. salt
1/2 tsp. pepper
1 can (12 oz.) beer

Vegetable oil

Combine flour, salt and pepper in a medium size bowl. Beat in beer with a wire whisk or rotary beater until smooth. Let stand 30 minutes.

Pour enough vegetable oil in a large skillet or saucepan to make a 1 inch depth. Heat to 375 degrees on a deep fat frying thermometer or until a cube of bread turns golden within about 60 seconds. Dip fries into beer batter a few at a time, allowing excess to drain back into bowl.

BEER BATTER FOR VEGETABLES
1 c. flour
3/4 tsp. salt
1/4 tsp. pepper
6 oz. (1/2 can) beer
2 tbsp. melted butter
2 eggs, separated
Combine flour, salt, pepper in mixing bowl. In smaller bowl beat egg yolks until light, add beer and stir in dry ingredients (stir only until moistened). Stir in butter. Let stand at room temperature about 1 hour. Beat egg whites until stiff and gently fold in batter. Dust seafood and vegetables with flour, then dip into batter. Fry at 375 degrees about 3 to 6 minutes. Turn only once. Drain on paper towel. Caution - Don't try to fry too many pieces at a time.

2 lbs russet potatoes
2 cups all-purpose flour
1 (6 ounce) can evaporated milk
oil (for frying)
salt and black pepper (to taste)


1. Heat oil to 325' in a deep fryer or a large deep pot, no more than half full.
2. Slice potatoes into wedges (peel or leave on potato skins).
3. Fry potatoes for 2 minutes and drain, allow to cool off.
4. Turn oil up to 360'.
5. In a bowl combine flour, salt and black pepper and set aside.
6. In another bowl add evaporated milk.
7. Dip cool potato fries in evaporated milk than into flour mixture.
8. Fry 5-10 mintues or until browned.
9. Drain on papertowel and enjoy.
