Smoked Gouda is the bomb. Unfortunately it doesn't melt that well.
But give it a try in any dish you make. You will be surprised at the outcome.

I like cheese but my g/f basically has a cheese fetish, she puts some sort of cheese on everything she eats except sweets, she also has "cheese" as her friend on myspace

I love cheese, and my boyfriend is obsessed with cheese. I am actually trying to experiment with different kinds of cheese and my new favorite is Gruyere. Unfortunately, I bought it once and can't find it again. I made the best spinach and cheese calzone with it!

Yes. But I hate "American" cheese. In Canada it's just called cheese slices. for grilled cheese sandwiches and stuff

Absolutely, I live in upstate NY. There are hundreds of winery's near by and most sell unusual packages of cheese. Cuba NY has "The Cuba Cheese factory". You can order on line. Look what they have just for grins. In our area we have a local branch grocery store - Wegmans based in Canandaigua NY. that has a great selection.
