Food rots when microbes start eating it. They break the food down and multiply, then their kids do the same. Eventually, all that's left is microbes, their waste, and the parts of the food they couldn't eat.

leaving it out mostly.. There are so many germs travelling around you, and when you have some sort of food out for too long, then those germs and bacteria can start to feed off of it.
