Because most animals don't eat their own kind (although a few do, I admit).
Cannibalism has existed in a few countries. In China, they used to eat them when there was a famine.
Anyway, I'm sure you can find this type of info in the link someone gave you (Wikipedia).
I actually read a book about cannibalism. In the end, the guy concluded that it would be a good idea if human beings ate other human beings (dead ones, of course) because then, we wouldn't need that many cows and other animals (which need a good deal of food, etc.).
The thing is, eating human flesh can give you diseases, particularly if you eat the brain (responsible for a disease similar to mad-cow disease). I'm not sure you could catch IADS, as AIDS dies at certain temperatures. But I don't know about cancer and other diseases.
Personally, I'm not sure I'd like to eat human flesh. I know it's a cultural thing, but I still don't want to. As for you, it's against the law, so you'll have to restrain yourself.

Heheheh... Okay, pulling mind away from gutter. By the way, I love that you filed this under "etiquette". Thank you so much for that.
Cannibalism does happen, though it hasn't ever really caught on. The tribes that do practise it tend to eat their enemies, and it tends to have ritual meanings. They may also eat their dead, or, in one case I heard of, villagers they thought were demonic spirits. But anyway, it's not like chowing down on a hamburger, quite. The reason is, of course, that you don't want people to have a taste for people. Mammoths were so tasty that now there's none left, and we don't want to do that to us.

It's not in some cultures. There is a culture that used to roast and eat the flesh of the dead out of respect.

the same reason it's "wrong" to eat turkeys, or chickens, or dogs, or fish, or lamb.
if you don't have a problem eating other animals, I would think it hypocritical to say cannibalism is wrong or 'disgusting'
I think it's ethical as long as the human is dead, their family has said their goodbyes, some of their organs have been donated, the deceased has given permission to be eaten, & their flesh is safe to eat. Besides, think of all the money, trees, & metal you could save by not having to buy a casket for them.
...as an afterthought, is it possible to get AIDS from eating an infected human?
there's no right or wrong there's only food!

Eating people isn't illegal. But a person has to give you their consent and be dead in order to eat them, and to the best of my knowledge, killing someone is illegal.
