If you are still interested in the person, tell him/her that something has came up and you need to take a rain check.
If you are no longer interested, be honest and say that you do not want to go on a date with this person. Honesty sucks, but always the best policy.
Another alternative: take a few more friends so it won't be a "date" situation.
