Do you have a DVD player that upconverts?
If yes, most up-convert DVD players will allow 1080i only from the HDMI port
If not, 480i (or 480p if you have a progressive player) is the best you can get. However, the HDTV scales up 480i to 720p automatically.

So, unless you believe that your DVD player has a better scaler/deinterlacer than your TV, leave it as is. Let the TV do all the scaling,

A standard progressive DVD player can only output up to 480p. If you have a HD DVD player or upconverting DVD player, then you can upconvert to 720p or 1080i. It doesn't matter what your TV supports, it's all about what your DVD outputs.
