i mean all of thier stuff, who gets it if they have no immediate family, and they will eventually get out and need these things.

Depends on what you are arrested for and on what level. Sometimes if the things are in your name, then yeah, they can be seized. Sometimes they will be released to family but only if you/ the family can prove it was not bought with proceeds from the crime.

Police auctions. I got my sail boat for $2000 that way. It's worth allot more than that. Stuff is usually taken care of this way, the city takes property of your house and any other property and is sold off, pets go to the local shelter and any other stuff that can't be ridden of either goes to charity or is destroyed. Very little can be kept for you when you are released.
