Breeding this type of dog with another type of dog and so on...

because different dog breeds once served different purposes. so the breed was created by taking several dogs that fit and had the temperment of what the person was looking for until you have what you see today. the german shepherd is a mix of all sorts of herding dogs that were very intelligent and hardy and loyal. they will use mixed dogs and pure breeds at that time to get what they were looking for. but don't get me wrong i don't go for the new designer dogs. originally mixing breeds and getting a new breed was because of a purpose. i can't understand what purpose a puggle can serve differerntly than a regular pug or any dog of that type. these so called "new" breeds are just the dog of the day. they are not being bred to improve on another breed and serve a better purpose.

Different people had different qualities that they looked for in a dog. They selectivly bred only the dogs with those qualities, thus causeing a breed to become distinctly different over time. Eg. Border collies developed because farmers chose dogs that were good at helping them with sheep, the farmers then bred 2 dogs that were both good with the sheep. This process was repeated a lot of times and so border collies as a breed were born. Imagine the same thing happening repeatedly, but for different jobs, eg, hounds for hunting, labradors for retrieval, and terriers for ratting.

When wild dogs (wolves mostly, I belive) were domesticated, people eventually started to use them for different purposes. Hunting, draft (like huskies pulling a sled, though I believe there used to be more draft purposes for dogs), herding, and companions are the main categories. The dogs found to be best at the desired task were bred more, but often forced to incest with siblings to have a better chance of passing on the desired trait. That is also why some breeds are more prone to certain genetic disorders. Dogs are essentially mankinds first genetic experiment.

Cross breeding diffent breeds.
All breeds are 'engineered' for a purpose. Dauchhounds (sausage dogs) for example were origionally bred to go down holes and flush out rabbits, so they just breed several kinds of dogs together that have the features or characteristics they want untill they get the required specs.

Man has been keeping dogs for a long time. Wild dogs often tend to abandon the smallest of the litter, and man probably started by rescuing these.

As dogs became useful, they tended to be selectively bred for hunting, guarding, controlling livestock etc. More recently, some were selectively bred for decoration or curiosity. All the breeds we have today were selectively bred from wild dogs - mostly European wolves.

Humans bred them, by mixing different breeds to get what they liked best.
Some breeds would not survive in nature. Scottish terriers, for instance, can't get in water or they'll drown. They are adorable, but it's a bit cruel to breed an animal who would suffer such a fate.

The answers in the question!
Someone decided they liked certain aspects of the (mostly) tame wolves and (not so) wild dogs.
They selectively bred different animals with pronounced characteristics until eventually, distinct Breeds were apparent.
This continued over hundreds (at least) of years and in the modern world there are literally hundreds of distinct 'pure' breeds.
If you think about it it's actually controlled, enforced and accelerated evolution.
