[Eternal Progression teaches that God was once a man who progressed to Godhood, and we humans have the ability to do the same through strict adherence to LDS doctrines and temple rites.]
Yet Moroni 8:18 says, “For I know that God is not a partial God, neither a changeable being; but he is unchangeable, from all eternity to all eternity.”

It's possible that while horses did not exist in the region, that people who had traveled from the region had seen them elsewhere and so they were "known" by them. See this excerpt from farms/byu/edu. Not sure I "buy In" myself.
In short, the Book of Mormon claims only that horses were known to some New World peoples before the time of Christ in certain limited regions of the New World. Thus we need not conclude from the text that horses were universally known in the Americas throughout pre-Columbian history. Moreover, the Book of Mormon never says that horses were ridden or used in battle, although some passages suggest that at times they may have been used by the elite as a draft animal (see, for example, Alma 18:9; 3 Nephi 3:22)

I cracks me up people are so adamant to make a point, when their point is useless. Who knows what existed in America when the people of the Book of Mormon arrived, and maybe a word used by Joseph Smith was the closest translatable word. Regardless, did the dinosaurs roam the whole earth? Or, did they only exist in very specific locales, such as those places we have found fossils? The significant thing, that is amazing to me, is that people are trying to disprove religion, when religion is primarily a faith based thing...which means you aren't going to find objective evidence on an earthly level, at least not for everything. That is how all Christianity is. Can you prove God exists? How about heaven? How about jackalopes? Either be religious or not, believe what you want to believe, but allow others to believe as they will also. We should have respect for all people.

Because the "Book of Mormon" was written as a "historical" romance by one Solomon Spaulding in an attempt to explain where these Indian people came from (very Euro-centric mind set back then, ya know?) Joseph Smith Jr.'s friend ripped it off from the printers where he worked and Joseph Smith Jr. turned it into his religion. The book was nominally Christian. However, Joseph Smith Jr.'s family was pagan and into "hermeticism" (besides being a member of the Masons). Thus, this book that supposedly is the basis for a "Christian" denomination is actually a pagan religion. Under the rule of "You can't give what you don't have," Joseph Smith Jr. wasn't a Christian, so he had no ability to make a Christian denomination. He made a pagan, hermetic, alchimist denomination.
The horse was mentioned because Solomon Spaulding didn't know where the horses originally came from.

Oddly, there were hores, camels, and mammoths (resembling elephants, right?) in America, 'til about 13,000 years ago. The remains are found in the La Brea Tar Pits. Visit the museum there some time. Los Angeles is here waiting for you.

I am not a Mormon, and I accept the clear and abundant genetic evidence that aboriginal North Americans have no semitic origins, in contradiction of LDS claims.
However, you should know that until about 8,000 years ago, North America did have native horses. These would likely have been much like the rare Przewalski's horse, the wild horse of the eastern steppes of Asia.

Many pre-Columbian carvings and various works of art support the idea that horses, honey bees and even elephants existed prior to Spanish arrival in the new land. Some may disagree, but look at the artifacts shown in the sites below and decide for yourself.
