My son loves to help me cook, and got some play cooking utensils for Christmas, and im sick of cookes, brownies and the like. Im not looking for kid-friendly recipes, im looking for something very easy, (but still an actual dinner), that he could do most of on his own.

I would suggest subscribing to Kraft Foods Food and Family magazine. It is free and it comes out quarterly. There are many recipes in there just for kids to help with. You can also find them online at kraftfoods.com. I hope this helps. I don't know any off the top of my head, but this magazine helps me out a great deal. It really simplifies things. My soon to be 3 year old (b'day is on Wednesday actually : ) just loves helping me cook too! He isn't fussy with what he gets to do. He just loves being in the kitchen, helping. I mean, it could be any thing from washing peeled potatoes, to putting cut veges into the pot. From sifting the dry ingredients to scooping out the end of the batter (before licking the spoon)
But the "recipe" he helps out most with would be making/well prepping, french toast (which isn't a bad dinner for him if he had veges and a little meat for lunch)

He uses cookie cutters to cut the bread into which ever the shapes he wants to eat.
He gently smashes the egg on the bench top (one of his favorite parts)
I open it into the bowl
He adds about a tablespoon of milk (which i previously pour in to a cup - he drinks the rest)
He adds a little pepper and garlic powder (you could cinnamon instead of garlic and pepper) He shakes a bit on a saucer first - just to be safe
He mixes it up
He even dips the bread, all ready for me to cook.
Its his pride and joy!

My son loves to cook too!

mac n cheese is easy--you just have him dump in the pasta and later the cheese packet adn butter and milk and stir-- make sure he is not near anything warm...

Sandwiches are easy...he can spread things on with those chil-plastic speaders--they look like zoo animals...

if you like making pizza at home he can help with that--you can get ready made dough--and just spread sauce--veggies-cheese whatever on it--and put it in the oven...

you can make salad together --he can toss it with his fingers!

you can make nachos or tacos together--get the ingredients out and then he can fill up the tacos or layer the nachos...

fried rice--he can add veggies and an egg to already cooked rice--you can take it off the stove and he can mix it all together..then you heat it up..and add seasonings...

you can make homemade soups--just keep adding different ingredients to a broth--he can make his own recipe that way..and you can have him stir it--then you can heat it on your own...

Every Friday night, I have "Make Your Own Pizza Night," where the kids literally make their pizza any way they like it. I simply buy "Kontos" Pizza Parlor Crust and cut some onion up, slice some pepperoni or whatever toppings are desired. I let the kids put their own sauce on (squeeze bottle), their own cheese and desired toppings/herbs/spices. They love it, they have fun and it's a healthy meal.

Hi nikki, this is actually an answer to your last question. I have found the book ..."Difficult to delightful in 30 days" to be a GREAT book. It worked really well for the little girl I nanny for. We all read to the book and followed the instructions, and she is SOOOOO much better now. Hope that helps. :)

I like to make Southwestern Mac N Cheese. All you need is a box of Mac n Cheese and a can of chili. mix them together and you have a meal!

Also- I like to make pancakes with chocolate chips. Same thing- mix them both and cook.
