A gift card to Bed Bath and Beyond, Lowes or some other home store. Ask - she might have a housewarming registry at a store.

Well, if they just went thru the moving process... how about making them a casserole or something & put it in a new pyrexware -sp? dish with lid that they can keep or something. They have the ones that come in a keep warm huggie, etc. And nice bottle of bubbly? If they don't drink you can get a non-alcoholic version. :)
I like the gift card options to a home store suggested above, too.
I don't know about a plant. Not all people like to keep plants. Everyone likes to eat! :)

Plants, candles, bottle of wine, pot holders or coasters are nice gifts for a housewarming gift.

What do they like to do? Collect?

Do they party? If so a nice bottle of wine and set of Crystal glasses.

Religious? Pretty cross/star for their new home.

Stained Glass picture.

Plant in a unique planter - ONLY if she is into plants, otherwise it will be just another chore for her. You could always get a nice silk plant I guess.

Gift Certificates seem so impersonal to me - sorry, just screams "I was too lazy to get you something".

The answer ranges between nothing to a potted plant.
Since she is in authority over you, it is inappropriate for her to expect any gift from you. If you just want to be nice, I would give a medium size potted plant. Decorating or cooking ideas are personal choices, & color schemes are hard to match.

Picture frames are always safe.

A gift certificate to a home goods store. (if you're the type that thinks negatively - gift certificates are viewed as "lazy", if you're the type that is creative and likes to coordinate your own home - gift certificates are viewed as fantastic & practical)

Candles.
