4-5 days well wrapped up (plastic baggie, or tinfoil)
Or take the amount of pepperoni you need and wrap in tinfoil the rest you're not needing and freeze it* Lasts much longer in the freezer*~

It it is wrapped it may last a few days, but unwrapped it goes off overnight, and starts tasting funny. I noticed this last christmas as I had lots of cheeses and chorizos on the table, the day after they had a funny taste.

Its never good--- aged for a very long time--sulfites--gross and dead
