Yellow pasta is egg-based (tagliatelle, tortellinis). White pasta is water-based (spaghettis, maccheroni, penne...).

Yellow one is lots better when eaten fresh rather than dried, but it keeps quite well anyway. Make your own if at all feasable.

White is better with veggies sauces - typically, tomatoes or pestoes go only on white - durum wheat pasta.

What is better depends very much on tastes.

"Yellow" pasta is generaly flour or corn based. This is your most common type of pasta. The only "white" pasta I know of is called
GNOCCHI and is made out of milled potatoes and flour. I hope this helps.
