Not all Christians are uninformed. I am extremely interested in some of the above listed fields.
Why do so many people make such broad statements?
I recently read an article that stated the average high school graduate in the U.S could not find familiar countries like England on a map of the world, let alone the capital of the U.S. I'm sure not all of those tested were Christian. Maybe this is indicative of the real problem.

It's not Christians. It's fundamentalist Christians that insist on the literal interpretation of the Bible, and even then it's usually only American Fundamentalist Christians. You'll find the same is true with fundamental Muslims too.
The problem, of course, is that normal Christians are almost indistinguishable from atheists or agnostics in everyday situations. It makes the fundamentalists more visible and appear to be more representative of the faith, when in reality they're just the lunatic fringe.
Then there's the moderates whom clearly weren't taught about the science properly, due to a poor education system and the interference of class clowns.
Sometimes, there's a circular feedback mechanism. Those who aren't taught properly then tie up the school system by insisting that their "alternatives" are taught, which then perpetuates more who grow up to be like them.

Are you for real? I am educated and very interested in biology, geography (especially geology and environmental geography), history, english. I have read Dawkins, Hawking and Segan to name a few that aren't Christians (more importantly, I understand the words). My favourite mag is New Scientist. I read books that make strong points even if I know the authors are atheists or I don't agree with everything they say. My beliefs don't waiver and my mind is open enough to see that religion and science can co-exist. I respect other people and I don't shut people out just because they have something different to say. Why are people so threatened of Christianity? Why do people feel they need to disprove something they claim they don't believe in? If you don't believe, what is the logic of going on the attack? Where does all the anger come from, eh? What is the point of that? I don't get why people are so threatened by anyone that is different from them...and I believe that it is you who requires more reading to get accurate information and be a little more open minded.

Well, why is everyone else so woefully uninformed about them? That's a rather implicative question. I'm a Christian, and while I am no scientific expert, I have a pretty good understanding of biology and astronomy, can't really claim more than a little in the geology section, but I find I do better than most people.
I think the question you're getting at is why don't Christians agree with Evolutionism? Some it's because they just close their ears to it, but others, like myself, it's because I do have a grasp on the aforementioned subjects, and find that evolutionism goes directly against principles of genetics, astronomy, and physics.

Don't assume such a generalization is true. I am a Christian and I am not "woefully uninformed" about these things. I am constantly in awe of all the wonderful things God created on and in the earth and throughout the endless firmament.

The ones that are uninformed, are not such good Christians, to be so disinterested in "Creation". Most likely they tend to cover up ignorance with their religion...kinda sucks for educated Christians, who I know are not uninformed on these disciplines, in fact they are professors, inventors and writers on these subjects.

Why are you showing ignorance by stereotyping a huge group of people. There are all levels of education within a given group of people. There are plenty of top scientists that are Christians. My high school and college science teachers were Christian, and no it was not a private school. There is no conflict between real science and Christianity. The only discrepency is by those who enter into science with a bias.

Christians formulated the majority of what we know about astronomy, biology, geology, etc. How long do you think atheism has been involved in science? Galileo, Copernicus, Newton, Pascal, DesCarte - all Christians.

Your question could be construed as being insulting as it generalizes. Would you ask a silly question such as "why do all buddhists drive BMWs", "Why do all aetheists eat turkey?" "Why do all blue-eyed people leave school at the age of 14?" No, you wouldn't as these questions would be similarly generalized and ignorant. Some of the world's top physicists, clinical biologists, geologists, scientists and educators are Christian just as some of history's most infamous criminals, murderers, rapists, and idiots are aetheists. Grow up.
