They're starting to recommend that people with IBS, or IBS-like symptoms be tested for celiac disease, which is an intolerance to gluten (wheat, rye, barley and oats). A lot of people with celiac were misdiagnosed as having IBS for years. (18 years for me). It takes an average of 11 years for a person with celiac to be diagnosed.
I used to have what I called "30 second notice" diarrhea. Where one minute you were fine, and the next minute you had to RUN to the bathroom. So I know exactly what you're talking about.

You can also be intolerant to other common foods and get IBS-type symptoms. Soy, corn, eggs, yeast, dairy, etc. can all cause major issues. You may want to think about keeping a food/symptoms journal and see if you can identify the culprit(s).

I know this isn't a funny things at all. I have it too. The way I dealt with it (and it works) is lay off the sugar and caffeine as much as possible. In other words, eat as healthy as possible. I don't do organic or anything, but am smart about what I eat.
I have also been eating a yogurt a day. Yogurt has culture in it help 'normalize' the lining of your intestinal tract.
The other thing that helps a ton is to drink lots of water. The more water I drink the better my system runs!!

I went through this. I went to a GI doctor and he was going to do an upper endoscopy on me, so I got nervous and made a point to eat more fiberous food and take Citrucel.
I'm better now and no Upper endoscopy. Yay!!

broccoli, spinach, swiss chard, green peas and other dark green leafy vegetables
dried peas and beans such as kidney beans, lima beans, black-eyed beans, chick peas and lentils
Nuts and Seeds:nuts and seeds such as almonds, whole flaxseed and soynuts

If I ever have diarrhea, I would eat a bunch of strarchy foods (bread, potatoes, etc)... It kind of soaks-up the excess liquid.
