...so doesn't that give me the same status as an infant? How can I be held accountable if I die during my incapacity? Or does this all just go back to the last time I COULD make a conscious decision? Does this mean that only conscious people are accountable?

As an adult if you're asleep, knocked out or in a coma you were accountable and had the choice to make a conscious decision before you became unconscious.
Infants can't make a conscious decision be cause they don't have the knowledge or understanding yet to make a conscious decision.

it seems like God will have mercy on those that are stupid.
i think there is more than ONE envioronmental Force happening when it comes to the subconscience.
Sleep walking can have dangerous consequences. So can being high on narcotic drugs. In my experience drugs that i take never make me lose my mind. Mostly I just dont sleep for a couple of days. So i hated them and stopped doing them.
however the brain makes its own DMT and people under the influence of synthetic DMT halucinate almost always the same things. ET creatures are seen repeateadly. So it comes down to the vibrations of the spirit and the mind working together what is seen and how much accountability is given.
but there are technologies that can interupt the brain activity. for example in Japan there are proximity Vending machines that only people within a 50 ft radious can HEAR what it is advertising. So im told. I am also told that there are machines tHat SPEAK into a persons dreams and at least one version is called: the voice of God.
Such external devices and scripts can be used with good intention but they can also be USED for wickedness. I wond how many people dream dreams of pornography or see visions of angels with these kinds of devices and with what scripts they can torment the mind in our dreams.?
I remember having a dream where i worked as a security guard. I deliberately did not say a specific sentence but the words came out as if had said them myself.
So there are False dreams as well. but when it comes to sleep walking? can a person be guilty of choice that is made in an altered state of mind, if he did not make the choice to be in such a state. I dont think so. Although i do know that the spirit ofmesmerism and the act of being beguiled has its abilities too deceive and create a sleep walker.
Eve was beguiled and she was still punished.
There was a certain guy who woke up in his car with blood all over him, apparantly, allegedly he drove his car to his parents while being alseep, and murdered both of them. He turned himself in, went to court and was judged innocent by his peers. Im not sure what the actual verdict was.
But then again another certain man almost completely copied the same thing, and was found Guilty.
first of all, the first man may have been drugged and was just left with the weapon and the blood and didnt do anything at all while someone else killed his parents. ! the second guy might have been caught as to being a liar. Im not sure either way, but it shows a kind of mercy and a true way people can be judged.

The fact that you asked this question shows that you have knowledge of the law. You are now under the law. You can now make a decision. The law of GOD is like the law of gravity. If you are standing on top of a mountain and jump off it is a bit late to say. "Why can't I make a decision now ? This is not fair."
